Though I haven't technically started the challenge yet, I've been preparing for it by gradually aligning my diet with paleo friendly foods. I'm in a super rush today and have been running around all morning in preparation for our trip this weekend :) I just walked in the door starving and needing something quick and satisfying. Since I haven't grocery shopped this week, knowing we were leaving town, it's slim pickings around here. I managed to find some organic frozen broccoli, grassfed pre made hamburger parties, and avocado. Throw those together (cooked of course) add a little salsa and Cholula, and lunch is served :) totally paleo, totally quick, and incredibly satisfying. Now to finish packing before its time to head to the airport.
