Hey all, for those of you who cannot find or don't want to search for coconut flour, here is another version of my breakfast cake. Remember, this is super basic, so you can dress it up and add to it. I used this recipe to make carrot cake last week, so get creative!
2 tbsp almond butter
1 half small banana mashed
1 large egg
1 pinch baking powder
1 pinch pumpkin pie spice (optional)
combine and microwave for 2 mins or until firm. If you find this cake to be too dry for you, you can use the whole banana or add a tsp of coconut oil. You can also add vanilla extract, cinnamon, dried fruit, shredded carrots. I usually just top mine with almond butter and fresh berries.
