Day 3

TGIF my friends! Today is day 3 and I am feeling great! I got to spend my morning shadowing an awesome local doctor, and what I love so much about his practice is the fact that he focuses on lifestyle changes and supplements rather than meds!!! It's not easy finding a provider like this, especially in the South, so I'm incredibly blessed to have the opportunity to learn from him and his wonderful nurse practitioner. She recommended the book "Wheat Belly" since she knows I am very interested in the topic of nutrition, and spend a lot of time studying it. I've been working toward cutting out wheat for over a year now, with paleo being the most drastic step thus far. This book really explains the science behind how wheat, and gluten, affect all the body systems. If you have the chance, I highly recommend reading up on this topic.

As for meals today, I'm finding more and more that I am so satisfied doing Paleo that I really don't need to eat as often as I used to. As a result, I don't need to snack as much. For breakfast I had my usual, "cake" and sausage. I did snack on plantain chips and cashew butter because I didn't have time to have lunch until around 1. Given that I had breakfast at 7:15, I'd say that's pretty good. For lunch I ate last nights leftover chicken and quickly sauteed some broccoli slaw and spinach to go along with it. I had to make a Trader Joe's run today because I completely forgot to get dog food when I was there Tuesday (my dogs love their brand). I ended up picking up some coconut milk, plantain chips, brussels, and bananas as well.

I was so happy to hear from my friend Aubrey today as she is the one who inspired me to try Paleo. She and her husband are also doing the challenge and are a few days ahead of Chad and I. She invited us to a great burger place (Burger Up) for dinner, and I was beyond excited to accept. I went to crossfit tonight so I was happy to forgo cooking dinner. It was pretty entertaining seeing the look on our servers face as we ordered. We all had burgers without buns, and had to both add and subtract items to fit the paleo guidelines. Now I will say that we did indulge in their amazing sweet potato fries, which are fried in peanut oil. No, this is not so paleo. I had the Aussie burger which consists of a grassfed beef patty topped with pickled beets, tomato, a fried egg, and I added avocado.

I figured that after completing the "dirty thirty" (see below) today, I could enjoy this indulgence at dinner. I'm full, satisfied, and happy! I'm looking forward to a fun filled weekend and I hope you all enjoy yours!
