Hot Carrots

6 Medium carrots peeled and cut on the bias
1/2 medium onion
1/2 large fresh jalepeno
2 tsp oregano
1/4 cup white vinegar
2 cups water
2 tsp sea salt
2 bay leaves

Combine all ingredients in a medium to large pot and allow to marinate for at least an hour. Bring water to boil and then simmer no longer than 15 minutes to insure carrots are crisp. Enjoy!
