Day 7: One week down

I gotta say, though we have not had a particularly bad winter (yet) I cannot wait for spring. It is absolutely amazing how this cold, drab weather makes me crave warm, heavy foods. A salad really doesn't cut it on a day like this, and what sounds really great is slab of warm chocolate cake and a latte. Sigh.... Instead, I've stuck to my usuals: breakfast cake and sausage, brussels and chicken, plantain chips and cashew butter. I was a little lost on what to make for dinner tonight so I settled on flank steak, sweet potato, and grilled veggies. I ended up making a jerk inspired dry rub for the steak which consisted on cinnamon, cayenne pepper, black pepper, all spice, salt, and cardamom. I mixed these spices and then coated both sides of the steak, and set it back in the fridge for the next 5 hours.



I headed to CrossFit where I was introduced to "Angie" and let me tell ya, she is a B!

100 pull ups
100 push ups
100 situps
100 squats

for time, must complete all reps before moving to the next exercise.

I'm pretty sure I won't be able to use my arms tomorrow!

So back to dinner... When I got home I cranked the oven to 400, wrapped the sweet potatoes in parchment, and threw them in. (I don't use foil because there is growing research that supports the connection between aluminum  and health issues such as alzheimers) I then chopped up a bell pepper and a zucchini, coated them with coconut oil, pepper, garlic powder, and little salt. I let the potatoes bake for about 20 minutes before I turned on the grill. I seared the steak for 7 minutes on each side and grilled the veggies that long as well. I allowed the meat to rest for about 3 minutes before thinly slicing it. Finally I removed the sweet potatoes from the oven and topped them with a little honey and cinnamon.
