What a day! I woke up this morning with every intent of heading to crossfit but I was so sore I could hardly turn over. I decided it was best to show myself some compassion and sleep in instead. It felt great! I got up around 7:45 and headed straight to the kitchen to make breakfast for Chad and I. I love cooking for the two of us as a start to our day. Up until a few weeks ago we worked out together 3 mornings a week, and then got to come home and spend about an hour together before work. It was so nice to have that time together. I'm really looking forward to getting back into that routine. For breakfast I had my usual mug cake and sausage but made Chad a scramble with turkey chorizo, spinach, and eggs. I packed him some plantain chips and cashews, and some roasted chicken and bell peppers for snacks, and got him out the door. Then I cleaned up and headed to meet my doula client.
I spent a little less than 3 hours with my client and her beautiful baby girl, and it was wonderful to see them both. She was so kind and complimentary, and I am overjoyed that she had a great birth experience. I feel incredibly blessed to have shared this sacred rite of passage with her and her family. <3 grateful.
For lunch I had left over turkey and marinara sauce along with some
steamed spinach. For whatever reason, I found myself not completely
satisfied so about 30 minutes later I had some plantain chips and a tbsp
of cashew butter.
I was in rush with dinner last night so I really wanted to make something awesome tonight. Chad said he wanted Asian flavors so I was immediately inspired. I started with about a lb of boneless chicken thighs and then made a marinade using lime juice, coconut oil, honey, sriracha, fresh garlic, and fresh ginger. I poured the mixture over the chicken and stuck it back in the fridge to marinate. Then I made a sauce to compliment the chicken which had all the same ingredient plus cashew butter and coconut milk. Super easy! I decided to head to crossfit tonight and I'm so glad I did. Though I was still sore, the WOD felt great! I got home around 6:45 and heated up the grill for the chicken. I then cut up asparagus, bell peppers, and onion and sauteed the veggies in coconut oil. In a small pan I heated the sauce on low and added a little more coconut milk to thin it out. The chicken cooked in about 20 minutes so the whole dinner only took about that long to put together. (I'll post the full recipe under paleo recipes). I piled everything onto a plate and added some raw broccoli slaw on top for some added crunch. This might be one of the best meals I've made but we'll see what Chad thinks.
Tomorrow I get to shadow a local doctor who is a wonderful provider, and I'm so looking forward to the experience. I also plan on heading to crossfit tomorrow night but we shall see how my body feels. Can't wait for the weekend!
