Day 9

Today I braved the cold to make a trip to Trader Joes and Wholefoods. Though I had my list in hand I ended up getting a bit more than planned. In total I spent just over $30 at Trader Joes and $70 at Wholefoods. My grocery budget is $400 (which I know is a lot) and with a week left in the month I've got $60 left. In the interest of saving a little money and cutting down on portion size, starting Monday, I'm busting out my food scale and weighing meat portions. I think I'm overdoing it a bit and I'm curious to see how much I'm actually eating.

For breakfast today I had the usual but I added some dried cranberries (I dried them myself so no added sugar!) to the "batter" and had scrambled egg whites instead of salsa. I left the house at 10:30am and between grocery shopping and meeting with my new boss, I didn't get home til well after 3pm. Needless to say, I was starving!!!! I grabbed a handful of plantain chips and snacked on them while I scrambled an egg, some egg whites, and heated up 2 chicken sausages. I added some avocado and fresh salsa.



Tonight I headed to CrossFit and the WOD was:
Coffins w/ plate 10x
Pistols 5x ea leg
Rope climbs 5x
Snatch 5x 95lb/65lb
Goblet squats 10x
Kettlebell row 10x ea side ( 50lb/30lb)
Split lunge jump 20x
T planks 20x
X3 rounds

It was a great workout and I felt awesome! My time was 11:02.

I was craving some good lettuce wraps so when I got home I quickly got to work. I cubed up a lb of chicken breast and about 8oz of chicken thighs and sauteed it with half of a medium onion that I'd diced. I made a big batch so we'd have extras for tomorrow. Here is the sauce:

1/4 coconut aminos
1 tbsp coconut melted
Juice of a lime
2 tsp raw honey
1/2 tsp seasame oil
1 tbsp rice wine vinegar
2 tsp fresh ginger minced
2 cloves garlic minced

I added the sauce to the chicken when it was about 3/4 of the way cooked. I made a little extra for dipping too. I sliced up a red bell pepper and some cilantro, and used both purple cabbage and romaine for make the wraps. They actually turned out really well and were pretty simple to make :)
