Breakfast cake

This is my new favorite breakfast item because for whatever reason, I need sweet rather than savory in the morning. You can change this up by adding ingredients specific to your tastes. Enjoy!


1 TBSP coconut flour
1 small banana mashed (if you use 1/2 it will have less banana flavor but may be drier so use just 1 tbsp of coconut flour)
1 large egg
1 pinch baking powder
1 tsp cinnamon or pumpkin pie spice (optional)


Combine egg and banana in a large coffee mug or small bowl and beat/mix until well combined. Add the remaining ingredients and mix. Microwave for 2 minutes or until firm. Turn mug upside down onto plate and cake should come out easily. Top with fresh berries and nut butter of choice.


Note:
I've been playing around with this cake a lot to get the texture just right. When I first started making it, I was using almond flour or almond meal. I switched to coconut flour because I like the taste and texture slightly more. Coconut flour acts a little differently in that is absorbs liquids like crazy. Therefore, you have to either add more moisture or use less flour  to keep it from drying out. Try it a couple times until you figure out what works best for you.
