Coffee creamer!

Chad and I have a special relationship with coffee, one that we realize may seem a little strange to some. You see, not only do we enjoy the taste of good coffee, but we truly savor the experience of sharing our morning cup together. On a usual morning at home, Chad is in charge of brewing, while I make breakfast. We buy our whole bean, organic coffee from a local roasting company. This same company has a restaurant at which we held our rehearsal dinner and purchased our wedding cakes. So yes, there is a sentimental connection to this particular brand.

Chad grinds the beans fresh and carefully measures each scoop to get the perfect flavor. Yep, its a process and we love it! So when I told him about the Paleo challenge, one of his biggest concerns was what we would do with our coffee. We didn't ever consume a lot of dairy, but we both love using a little half & half. I knew it would be a challenge to find a replacement, and even the coconut milk lattes weren't really cutting it for Chad. So yesterday I set out to make a creamer that he would not only accept, but actually like. Here's what I did:

1 can full fat organic coconut milk
1/2 cup light coconut milk
1 tbsp pure vanilla extract
1 tsp pumpkin pie spice

I put all ingredients in a shaker bottle that we'd normally use for protein shakes, and it works perfectly!

Of course the ultimate test is always Chad's reaction, and guess what, I got a big smile from him. Woohoo! So happy to have found a great alternative that makes our coffee taste great!
