Ginger chicken with cashew sauce
This was tonight's dinner and it is so simple and yummy! As always, get the freshest ingredients possible and read labels!
Marinade:
1 tbsp coconut oil melted
2 tsp honey
juice of 1 lime
1 tsp fresh ginger grated
1 clove fresh garlic grated
1 tsp sesame oil
2 tsp sriracha (look for one without preservatives)
Mix all ingredients together and pour over 1lb boneless, skinless chicken thighs. Allow to marinate in the fridge for at least 4 hours.
Cashew Sauce:
1 tbsp cashew butter
2 tsp honey
juice of 1/2 lime
1 tsp fresh ginger grated
1 clove fresh garlic grated
1 tsp sesame oil
2 tsp sriracha
1/2 cup coconut milk
Mix all ingredients and when ready to use, heat in a small sauce pan on low until warm.
I grilled my chicken and served it over sauteed veggies, and topped it with the cashew sauce and some broccoli slaw. Enjoy!
